Healthy Recipes: Vegan Baked Beans
Recipes INGREDIENTS
* 1 (16 ounce) package dry navy beans
* 6 cups water
* 2 tablespoons olive oil
* 2 cups chopped sweet onions
* 1 clove garlic, minced
* 4 (8 ounce) cans tomato sauce
* 1/4 cup firmly packed brown sugar
* 1/4 cup molasses
* 2 tablespoons cider vinegar
* 3 bay leaves
* 1 teaspoon dry mustard
* 1/4 teaspoon ground black pepper
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon ground cinnamon
DIRECTIONS
1. Place beans and water in a large pot, and bring to a boil.
* Reduce heat to medium, and continue cooking 1 hour, stirring occasionally,
* until beans are tender. Drain, and transfer to a large casserole dish.
* 2. Preheat oven to 300 degrees F
* 3. Heat the olive oil in a skillet over medium heat.
* Stir in the onions,
* and cook until tender. Mix in garlic, and cook until golden brown.
* Mix onions and garlic into casserole dish with the beans.
* Stir in the tomato sauce. Mix in brown sugar, molasses, vinegar, bay leaves, mustard, pepper, nutmeg, and cinnamon.
* 4. Cover and bake 3 1/2 hours in the preheated oven,
* stirring frequently and adding water if necessary.
* Remove cover, and continue baking 30 minutes.

150 mL chopped fresh parsley 2/3 cup
2 zest and juice of 2 lemons 2
6 garlic cloves, minced 6
60 mL capers, drained, 0.25 cup
divided
60 mL Western Classics 0.25 cup
balsamic vinegar
90 mL Western Family 6 tbsp
olive oil
310 mL orzo (rice-shaped 1 0.25 cup
pasta)

Cut salmon into 4 portions;
place in bowl.
Combine parsley, lemon zest
and juice, garlic and half the
capers in a blender or food
processor or in a bowl and mash. Add vinegar and olive oil;
process until well mixed
but still rough-textured.
Pour 3 tbsp (45 mL) of the
mixture over the salmon and
spread to coat evenly. Cover
with plastic wrap; refrigerate
overnight. Also cover and
refrigerate remaining dressing.
Remove reserved dressing from
the fridge and stir in remaining
whole capers.
Cook orzo in salted boiling
water, about 12 minutes or until
tender but not mushy. Drain
well; rinse in hot water; drain
well again and keep warm.
While orzo is cooking, preheat
barbecue to medium-high;
barbecue salmon pieces, skin
side down, brushing with any
remaining marinade as you
cook.
When salmon is done, toss hot
orzo with reserved dressing (not
the leftover salmon marinade).
Divide among 4 dinner plates
and top each with a piece of
salmon. Serve with a crisp salad.
Makes 4 servings.
