Healthy Recipes: Vegan Baked Beans

Recipes INGREDIENTS

* 1 (16 ounce) package dry navy beans

* 6 cups water

* 2 tablespoons olive oil

* 2 cups chopped sweet onions

* 1 clove garlic, minced

* 4 (8 ounce) cans tomato sauce

* 1/4 cup firmly packed brown sugar

* 1/4 cup molasses

* 2 tablespoons cider vinegar

* 3 bay leaves

* 1 teaspoon dry mustard

* 1/4 teaspoon ground black pepper

* 1/4 teaspoon ground nutmeg

* 1/4 teaspoon ground cinnamon

DIRECTIONS

1. Place beans and water in a large pot, and bring to a boil.

* Reduce heat to medium, and continue cooking 1 hour, stirring occasionally,

* until beans are tender. Drain, and transfer to a large casserole dish.

* 2. Preheat oven to 300 degrees F

* 3. Heat the olive oil in a skillet over medium heat.

* Stir in the onions,

* and cook until tender. Mix in garlic, and cook until golden brown.

* Mix onions and garlic into casserole dish with the beans.

* Stir in the tomato sauce. Mix in brown sugar, molasses, vinegar, bay leaves, mustard, pepper, nutmeg, and cinnamon.

* 4. Cover and bake 3 1/2 hours in the preheated oven,

* stirring frequently and adding water if necessary.

* Remove cover, and continue baking 30 minutes.

Recipes INGREDIENTS:

* 1 (15.5 ounce) can great northern beans, rinsed and drained

* 2 cups hot cooked angel hair pasta

* 3 tablespoons butter or margarine

* 1/4 teaspoon garlic salt

* 1/4 cup shredded Parmesan or Romano cheese

* Minced fresh parsley

DIRECTIONS for using Recipes

1. Place beans in a microwave-safe dish;

cover and microwave on high for 2 minutes or until heated through.

Place pasta in a serving bowl.

Add butter and garlic salt if desired; toss until butter is melted.

Add beans and cheese; toss to coat.

Sprinkle with parsley.

Serve immediately.

the ingredients for "Barbecued salmon with lemon capers + orzo"

500 g boneless salmon fillet 1 lb
150 mL chopped fresh parsley 2/3 cup
2 zest and juice of 2 lemons 2
6 garlic cloves, minced 6
60 mL capers, drained, 0.25 cup divided
60 mL Western Classics 0.25 cup balsamic vinegar
90 mL Western Family 6 tbsp olive oil
310 mL orzo (rice-shaped 1 0.25 cup pasta)

Nutritional analysis per serving Calories 447 Protein 27.7 g Fat 25 g Carbohydrate 27.5 g Fibre 1.8 g

the method to prepear "Barbecued salmon with lemon capers + orzo"

Cut salmon into 4 portions; place in bowl.
Combine parsley, lemon zest and juice, garlic and half the capers in a blender or food processor or in a bowl and mash.
Add vinegar and olive oil; process until well mixed but still rough-textured.
Pour 3 tbsp (45 mL) of the mixture over the salmon and spread to coat evenly. Cover with plastic wrap; refrigerate overnight.
Also cover and refrigerate remaining dressing. Remove reserved dressing from the fridge and stir in remaining whole capers.
Cook orzo in salted boiling water, about 12 minutes or until tender but not mushy.
Drain well; rinse in hot water; drain well again and keep warm. While orzo is cooking, preheat barbecue to medium-high; barbecue salmon pieces, skin side down, brushing with any remaining marinade as you cook.
When salmon is done, toss hot orzo with reserved dressing (not the leftover salmon marinade).
Divide among 4 dinner plates and top each with a piece of salmon. Serve with a crisp salad. Makes 4 servings.

Garlic Recipes.

Garlic can lower cholesterol modestly as well as prevent blood

from becoming sticky and forming dangerous clots.

The compound most studies focus on, allicin,

is the same one that gives garlic its distinctive odor.

In one analysis of five trials in which participants received either garlic supplements or a placebo,

the authors concluded that you could lower your total cholesterol about 9 percent

with the equivalent of 11/2 to 3 cloves of garlic daily for two to six months.

You need to crush, chop, or otherwise bruise the cloves to release the allicin.

For a sweet way to get your garlic,

remove the loose paper covering from a head of garlic,

cut off the tops of the garlic,

drizzle olive oil on it,

wrap in foil,

and bake in oven until soft, about an hour.

Then squeeze the heads of the cooked garlic onto toasted bread and spread.
